I needed a fast fix for my brownie with walnuts craving and came up with this cacao walnut fudge cookie recipe with the ingredients from my Paleo pantry. This recipe is for the dark chocolate enthusiast – it’s a soft, chewy, rich fudge cacao cookie made with 100% unsweetened cacao and sweetened with dates.

The rich cacao chocolate flavor is enhanced by the coffee in the recipe and reminds me of the richness of chocolate desserts served in fancy restaurants where the bowl of water with lemon in it isn’t for drinking but for washing your hands.

Cacao Walnut Fudge Cookies

Cacao Walnut Fudge Cookies

Ingredients

  1. Preheat oven to 350 degrees F.
  2. In a blender or food processor, combine 4 pitted, roughly chopped dates with 1/2 cup of hot water and blend until smooth. If you don't have a blender or food processor, chop the pitted dates into small pieces and soak in hot water.
  3. Roughly chop 1 square of Baker's unsweetened 100% cacao chocolate.
  4. Brew 1/2 cup of strong coffee (you will use 2 tsp. of this coffee).
  5. In a medium bowl, whisk together the cacao powder, egg whites, dates mixture, chopped unsweetened cacao chips, 2 tsp. coffee, vanilla extract and walnuts.
  6. Portion the mixed batter onto a parchment lined baking pan and flatten the cookies with the back of a spoon. Make sure to leave enough room between the cookies as they will spread out a little.
  7. Bake for 10-12 minutes until the cookies are set and the tops are glossy.
  8. Allow cookies to cool a little and eat warm.

Paleo Chocolate Chip Cookies

Instructions

  1. Preheat oven to 325 degrees F.
  2. In a medium bowl, mix together the dry ingredients: baking soda, salt and almond flour.
  3. In a small bowl, mix the together the wet ingredients: honey, macadamia oil and the vanilla.
  4. Pour the wet ingredients into the dry ingredients and mix together until combined. The batter will be thick.
  5. Add the chocolate chips to the mixture.
  6. Take 1/12 of the mixture and roll it into a ball with the palm of your hands and place the ball onto a parchment lined cookie sheet. Continue to roll out and place the rest of the balls.
  7. After you've made 12 cookie balls, flatten the cookies with the palm of your hand or the back of a spoon. Make sure they are completely flat or they will not cook through.
  8. Bake the cookies for 5-8 minutes.
  9. Remove from oven and let them cool on a cooling rack.
